Recipe for the World's Best Buttermilk Pancakes
Ingredients:
2 cups flour
1/4 cup sugar
1 teaspoon baking soda
1/4 cup cooking oil
2 large eggs
2 - 21/2 cups buttermilk
Combine flour, sugar, and baking soda in large bowl.
Separate 2 eggs and whip egg whites until fluffy.
Add egg yolks, buttermilk and oil to dry ingredients. Mix well.
Fold in fluffy egg whites to add air to mixture. Do not over mix.
Spray or bush cooking oil onto the griddle surface if you want your pancakes to be a little crispy.
Ladle batter onto hot griddle (350 - 400 degrees Fahrenheit). Adjust griddle temperature as needed.
Flip pancake when air bubbles in batter begin to pop and the bottom is golden brown. Important: Do not "pat down" the pancakes as they cook. They are supposed to be lite and fluffy.
Pancakes are done when you can lightly poke them in the middle with your finger and they immediately puff back up.
Serve finished pancakes immediately to hungry bystanders, or place pancakes on plate, butter them, and cover with foil to keep warm while you prepare the rest.
